Three years ago Poor Toms took Sydney by storm with the release of their Sydney Dry Gin Batch #1. Today, we bring you the first commercial batch of their soon-to-be infamous Strawberry Gin. This recipe was developed to get the party thumping at Griff’s sister’s wedding. It went down so well with the guests that they were forced to make it an official release. The recipe looks simple; the result tastes delicious. The PT crew steep the tastiest fresh strawberries they can find along with young ginger and hibiscus flowers (for colour) in a batch of Sydney Dry Gin. These ingredients impart their bright, lifted flavours and aromas and create the Gin’s beautiful pink hue. Then, the late addition of intensified cardamom and cubeb (or “Java”) pepper distillates to help elevate the delicate sweetness of the strawberry. Unlike many flavoured Gins, this is bone-dry—no sugar is added. It’s best mixed in a G&T, makes a cracking Rosé Negroni and an even better Strawberry Gin Martini.
